Change version numbers in CI builds

Description

Currently, a downstream plugin has to reference a specific version (2025.4.0-rc1-242) of EvoAl. It is a tedious task to stay up to date.

Change version number to use SNAPSHOT so we have an easier way for downstream plugins.
